Wilder Ritter stands for simple, creative and innovative cuisine. Head Chef
Christian Baur has developed his
own signature style – often inspired by French cooking.
About his concept:
I learned the craft of cooking in the traditional way. The 'old-school' has shaped me and my philosophy and as a native Allgäuer (from the Allgau region of southern Germany) I have a natural affinity for local home-style cuisine.
And yet every time I prepare a classic dish, I find it really exciting to break with the 'traditional-rules' of cooking, to discover and invent new rules and combine unusual ingredients to produce a new creation.
The result is a cuisine with traditional roots and a modern flavour. I'm not trying to shock people with wildly clashing aromas. Instead, I have fun combining different structures with sweet and savory flavours, but in such a way as not to lose the individual characters of ingredients used.
And a good kitchen alone does not make for a culinary experience. Matching wines precisely selected to fit the dishes and served by trained and experienced staff - that is true harmony.
Above all what's most important to me is that, in the end, everything comes together to form a single creation.
